
Carlos Delgado
Chef Carlos Delgado grew up in Callao, Peru, where he learned to cook alongside his family and absorbed the foundations of Peruvian coastal and Andean cuisine. After moving to the United States, he built his career in Washington, D.C., working in a range of kitchens—including China Chilcano—before developing his own modern approach to Peruvian food.
In D.C., Delgado’s restaurants Causa and Amazonia have earned significant recognition. Causa holds a Michelin Star, and Delgado received the Michelin Young Chef Award as well as the 2025 James Beard Award for Best Chef: Mid-Atlantic. These honors have positioned him as one of the region’s leading culinary voices.
